Instant Pot Pork Sinigang
An essential soup for all filipino families, Pork Sinigang. This soup is now more efficient to make with the help of an instant pot. I use the ends of pork ribs where its mostly cartilage, the cartilage gets super tender in the instant pot that you can eat them too.
Make sure to add lots of veggies.
Ingredients
Pork ribs or bone- I am using the ends of the pork ribs that usually get thrown out
1/2 onion
1 tomato- peeled
1 cup of diced radish or daikon
1 cup baby bok choy
2 tsp sinigang soup mix (tamarind)
1 pork cube
2.5 cups of water
1 tsp salt
1. In a small pot add the pork ribs and boil for 5 mins. This will remove excess blood from the bones especially when frozen. Drain and to the instant pot.

2. Add the onions, tomato and pork cube. Along with 2.5 cups of water and 1 tsp salt.
3. Make sure the valve is set to seal, then pressure cook for 25 mins.
4. Once it is done, you can either select the quick release (be very careful), I like to place a towel on top.
5. Select the saute mode on low and add the radish. Cook for about 10-13 mins until radish is fork tender.
6. Add your green pepper and bok choy, continue cooking until the bok choy is cooked about 5-7 mins.
7. Add the 2 tsp of sinigang mix, taste if you would like to add more sourness.
Serve with warm white rice
