Adobo sa Mangga (Mango Adobo)- The Adobo Series


This is yet another one of my favorite Adobo recipes, I know I have many favorites. I love this adobo because it uses one of my favorite fruits, mangoes. Now you have to use sour green mangoes for this recipe, this will be the sour to our adobo as this recipe does not have any vinegar. You can find green mangoes at your local grocery and asian grocery stores if they are in season. When I find them, I immediately peel them and slice them, then freeze the green mangoes. Then I can have mango adobo whenever I please. This is another simple adobo recipe that only has less than 3 ingredients; mango, garlic and your meat. This is best made with chicken, especially dark meat. 

Adobo sa Mangga (Mango Adobo)

Ingr.

1 lb chicken pieces
2 cups sour unripe mangoes
1 head garlic (8-10 crushed garlic cloves)
1.5 tbsp salt
big pinch of black pepper
1 chicken stock cube

  1.  Par boil the chicken pieces. In a large pot, add the chicken and enough water to cover the chicken. Bring to a boil and boil for about 5 mins. Drain and rinse the chicken and the pot. Return the chicken to pot and place on stove.
  2. On medium high heat, add the sour mangoes, crushed garlic cloves, salt and black pepper. Add about 1/4cup of water, bring to a boil and mix to combine. 
  3. Add about 1/2 cup of water and the chicken stock cube. Cover and simmer on medium low until chicken is tender. Check on the chicken and make sure the pot doesn't go dry. Scrap the bottom of the pan once in a while as the mangoes can caramelized at the bottom. The chicken will need about 30-45 mins to cook until they are tender. 
  4. Once the chicken is tender, remove from heat.
  5. In a skillet, add 2 tbsp of oil and place on medium high heat. Add the chicken pieces to the skillet and brown on both sides. 
  6. Once the pieces are brown, add the mango adobo sauce on top. You can add the amount you like, allow the adobo sauce to thicken and the mangoes to deepen in color, adjust seasoning at this point. 
  7. Once well combined and to your liking, enjoy the mango adobo with some freshly made white rice.
