Adobong Oxtail (Oxtail Adobo) - The Adobo Series


Another favorite adobo recipe of mine, but not one I make often because this is more on the expensive side. If you want to serve something different for your friends and family, this would be an impressive dish to make. You can make this the day before the event, because oxtail needs alot of time of cook. I made this in a crock pot but you can easily make this in a pressure cooker or instapot if you have one. Before you add the adobo flavors and oxtail to your cooking vessel of choice, make sure to reduce the vinegar. Since crockpots, pressure cookers, instapots don't allow liquid to evaporate, the vinegar will not be able to reduce and absorb into the meat. Its similar to alcohol, its not advised to put alcohol in those types of cooking vessels until the alcohol has been reduced and evaporated. Anyways, this adobo is more work then the other adobo recipes, but I guarantee this will be your new favorite adobo recipe when you try it. The oxtail gives a rich decadent beef flavor. The adobo flavors are mild but compliment each other really well. 

Adobong Oxtail (Oxtail Adobo)

Ingr.

1 lb of oxtail or 5 large pieces
1/3 cup cane vinegar
1 head of garlic (8-10 garlic cloves crushed)
1.5 tbsp salt
big pinch black pepper
Beef stock cube
1 tbsp anatto powder
2 tbsp oil

  1. Par boil the oxtail, in a large pot add the oxtail pieces and cover with water. Bring to a boil and boil for 5 mins on high. Drain and rinse the oxtail pieces, clean pot as well. 
  2. In a skillet, brown the the oxtail pieces. 
  3. Once browned, transfer the oxtail pieces back into the pot. 
  4. Add the vinegar, garlic, salt and pepper. Bring to a boil and allow the vinegar to reduce, do not cover the pot. 
  5. Once vinegar has reduced, add the beef cube and 1/2 cup of water. Bring to a boil. You can continue to cook your oxtail in the pot over the stove on medium low heat covered until the oxtail is tender. Just make sure to check on the pot and ensure there is always liquid. Or you can transfer everything to a crockpot, and cook for 6hrs on low. This way you don't need to check on it. If you are cooking this in a pressure cooker or instapot you may only need to cook this for 1hr or so. Check cooking time suggestions.  
  6. Once oxtail is tender, if you cooked this in a crockpot, pressure cooker or instapot, remove oxtail pieces and add to a pot and place on stove. Add about 2 -3tbsp of the cooking liquid. If you cooked this over a stove then remove some of the cooking liquid.
  7. Dissolve anatto powder in the 2 tbsp of oil and drizzle anatto oil over oxtail.  Allow the anatto oil to coat the oxtail, cook for about 5 mins. This will give the oxtail a luscious red.
  8. Once Oxtail is well coated, it is ready to serve with some white rice.
