Chicken Lettuce Wraps
An easy fast low carb meal. My little enjoys eating the ground meat with rice.
You can easily add any kind of vegetable to your lettuce wrap, I tend to use whatever I have in my fridge at the time. I like to leave the chicken slightly on the large size that way it doesn't feel like your eating ground meat.
Ingredients
1 package ground chicken
1 garlic cloves minced
1/2 onion small diced
1/2 cup diced mushrooms
1/2 cup diced zucchini
Sauce Recipe
3 tbsp soy sauce
1 tbsp mirin
1 tbsp sugar
1 tbsp honey
1/2 tsp sesame oil
1/2 tsp garlic powder
1 tsp cornstarch w/ 1 tbsp water
1. In a wok, add some oil about 2 tbsp. Heat the pan on medium high heat. Add the ground chicken and season with salt and pepper to taste. Fry until chicken pieces start to turn golden brown.
2. Add the minced garlic and onions. Stir fry until the garlic becomes fragrant.
3. Add the diced mushrooms and stir fry for 2 mins.
4. Add the diced zucchini and stir fry another 2 mins.
5. Combine the ingredients for the sauce in a small bowl and mix well. Pour the sauce over the chicken and continue cooking for 2 more minutes until the sauce is well distributed.
6. Eat with iceberg lettuce or butter lettuce, along with sliced cucumbers and cilantro.
