Longanisa and Peppers- Filipino Sheet Pan Meals


This was a take on sausage and peppers. I thought why not try this out with filipino sausage and filipino sweet bread (pandesal). It turned out really well. My only negative thing about this dish was the skin of the longanisa got a bit tough since longanisa is usually fried. If your going to try this dish, remove the skin. Again this meal was so easy to put together, plus you save on calories by not frying the longanisa in oil.

Ingredients
Package of sweet longanisa or hot longanisa (filipino sausage)
Half red onion julien
Red pepper julien
4-5 Cherry tomatoes
Pandesal- filipino sweet bread
Mayonaise

1. In a sheet pan add the red onions, red peppers and cherry tomatoes. Drizzle olive oil and season with salt and pepper.

2. Remove the skin of the longanisa and place on top of the onions and peppers.

3. Bake at 400 degrees for 25 mins and turn the longanisa half way.

4. In another sheet pan add the pandesal and bake in the oven 5 mins before the longanisa is done baking.

5. Remove pandesal and longanisa from oven. Cut the pandesal on top vertically (like lobster rolls) and add mayo.

6. Stuff each pandesal with longanisa, onions and peppers.
