Parchment Red Snapper Fillet- Filipino Sheet Pan Meals
This meal is take on a dish called Inihaw na Bangus which means Grilled Milkfish. The traditional way uses a whole milkfish cut along the belly that has tomato and onions stuffed inside. Being the busy mom that I am, I don't have time to clean a whole fish and not to mention milkfish has tons of tiny bones. Here is my simplified version, using fillet snapper. This recipe will work with any white fish. You can roast any kind of veg you like.
Ingredients
3 Red Snapper Fillets
1 onion diced
2 roma tomatoes diced
1/2 tsp salt
1 tbsp fish sauce
1 tbsp lemon juice
1. In a saucepan add 1 tbsp oil, on medium heat. Add the diced onion and sautee till soften.
2. Add the diced tomatoes and keep mixing until the tomatoes and onions are very soft. Season with 1/2 tsp salt. Set aside
3. Combine fish sauce and lemon juice. Brush mixture onto red snapper fillets. If you don't have fish sauce you can just sprinkle the fish with salt.
4. Add the fish to a parchment paper, top generously with the tomatoes mixture. Close the parchment paper to ensure it is completely sealed.
5. Preheat oven at 350 degrees, bake the fish fillets for 15-18 mins. Another option is the place the fillets in aluminum foil and cook on the grill.
