Slow Cooker Beef Mechado- Filipino Beef Stew


3 ingredient meal- Slow Cooker Beef Mechado. Many recipes for Beef Mechado add carrots and potatoes, but the way I grew up eating Beef Mechado is simply with beef simmered with onions, bay leaf and tomato sauce. This recipe is great to set when you go to work, as you will need 8 hrs to cook the beef cubes so they are fall apart and super tender.

Ingredients
1.5lbs of beef shoulder round or stewing beef
1 large onion diced
2 bay leaves
1 beef cube stock
1 tbsp tomato paste
2 cups crushed tomatoes
2 tbsp sugar
1 cup water
salt & pepper

1. Cut beef into large chunks, salt and pepper.

2. In a pan on medium heat, brown each piece of beef until brown all around.

3. Transfer beef chunks into slow cooker, add diced onion, bay leaves, beef cube, tomato paste, 2 cups crushed tomatoes, sugar and 1 cup of water. Season with salt & pepper to taste.

4. Slow cook for 8hrs on low or 5hrs on high for very tender meat.

5. Serve with white rice. If you dare, you can eat this with banana.
