Stuffed Mushrooms wrapped in Prosciutto

There's nothing like a stuffed mushroom with creamy cheese filling and salty prosciutto. Great for a side dish and to serve for a crowd.
























Ingredients
12 mushrooms + 2 mushrooms for stuffing
6 slices of prosciutto
4 oz cream cheese
1 green onion (stems and greens separated)
1/4 tsp garlic powder
1/4 tsp salt and pepper
3/4 cup shredded cheese

1. Clean the mushrooms by quickly rinsing in water or if they aren't that dirty wipe with a clean towel. Remove the stems and set them aside.

2. Arrange the cleaned stemmed mushrooms face down on a parchment lined baking sheet.

3. On a chopping board, finely dice the mushroom stems (only use the stems that aren't dried out) and the 2 mushrooms. Dice the green onion stems

4. In a large bowl add the cream cheese, diced mushrooms, green onion stems, garlic powder, salt and pepper and shredded cheese. Mix till well combined.

5. Stuff each mushroom with the cream cheese filling by using a teaspoon. Repeat until all the mushrooms are combined.

6. Using half a prosciutto slice, wrap each mushroom. Repeat till all are wrapped. If you don't have prosciutto you can use bacon as well.

7. Bake in the oven at 375 degrees for 25 mins. Enough time for prosciutto to crisp up.

8. Serve and enjoy
