Cauliflower Shrimp Fried Rice
I love cauliflower rice, its a great low carb option for one of my favourite take out dishes.
Cooking the cauliflower exactly how you would with fried rice ensures maximum fried rice flavour. My mom had the chance to try this and she was surprised how much she enjoyed eating this. And when my mom enjoys a dish thats something new to her then I know its a success. She's my toughest critic.
Ingredients
Half head of cauliflower
1/3 cup of frozen mixed vegetables
1 egg
3 shrimp
1 garlic clove
1 green onion
1. Remove the stems of the cauliflower and chop into smaller pieces to fit in a chopper. Blitz until the cauliflower is the size of rice. Set aside
2. Diced the shrimp, separate the green from the whites of the green onion. Finely chop the garlic.
3. In a wok or non stick pan, add 1 tbsp oil heat to medium high. Add 1 beaten egg.
4. Before the egg sets add the cauliflower rice. Stir fry till the egg is cooked.
5. Add the garlic and whites of green onions. Stir fry till garlic is fragrant. Season with salt and pepper.
6. Push the cauliflower to the sides and add 1 tbsp of oil. Add the chopped shrimp, mix in the centre then combine with the rest of the cauliflower rice.
7. Add the mixed vegetables, continue to stir fry.
8. Add 1/2 tsp sesame oil and 1 tsp soy sauce. Stir fry till soy sauce is well combined.
9. Garnish with the greens of the green onion.
