Perogie Casserole
It's that time again when there's a potluck every weekend until Christmas, here's a potluck idea that is satisfying and won't break the bank over the holidays. I'm not a fan of overly creamy casseroles, so here is my version of perogie casserole.
Ingredients
1-2 boxes of cooked perogies (I am using 3 cheese blend)
2 large onions + 3tbsp butter
1 package of Ukrainian sausage or Garlic sausage
1.5 cups shredded 3 cheese blend (preferable italian 3 cheese)
Chopped parsley for garnish
Sour cream on the side
Preheat oven to 400 degrees
1. Slice the 2 large onions. Over medium low heat, place the 3 tbsp butter and onions in a non stick pan. Season with 1 tsp salt. Allow the onions to soften until they are golden brown and soft. This can take up to 30-45 mins. If the onions start to fry lower your heat. Set aside.
2. Slice the sausage on a bias, lightly fry the sausage on both sides for about 2-3 mins until they are golden brown around the edges. Set aside.
3. In a large pot, fill with water and bring to a boil. Add the frozen perogies and cook to package instructions. Make sure not to over cook. Drain the perogies and add back to the pot of a large bowl. Add 1 tbsp of butter so the perogies don't stick. Set aside.
4. In a large shallow baking dish layer the bottom with perogies. Then add the caramelized onions. Repeat by adding the remaining perogies and caramelized onions.
5. Place the sausage on top of the perogies and spread out evenly. Add the shredded cheese over the top.
6. Add the casserole to the oven and bake for 20 mins or until cheese is melted.
7. Remove from oven, I added some more sausages so these ones weren't covered in cheese. The garnish with freshly chopped parsley.
8. Serve along side sour cream.
