Salmon Sinigang in Foil Packet- Tamarind Salmon

Traditionally fish sinigang is made in big pot of soup. It's absolutely delicious and one of my favourite filipino comfort meals. However sometimes you end up with a huge pot of soup and to be honest sinigang is not the best for leftovers. Vegetables get mushy and its hard to fish out what you want, you have to reheat the entire pot again; which then leads to overcooking everything. So here is my shortcut version for sinigang and literally will have no waste and no leftovers. I love this version for portion control and its super easy and fun to serve. This is great for just 2 people or even cooking for 1 person. This can be steamed, baked in the oven or in toaster oven. If you were going to cook for more than 4 people then I would just suggest making the traditional version. Serve this with some sautéed greens like bok choy or spinach, which is what is usually made with sinigang. You can also place the greens in the packet as well, however I didn't do that because I didn't want to overcook them as well.


Ingredients
2 pieces of 3oz Salmon Fillets
6 cherry tomatoes
1/2 onion sliced
thumb size ginger sliced
green onion for garnish


Tamarind mixture recipe for 2 servings: 2 tsp tamarind soup mix powder 1/4 cup water mix and spoon over salmon

1. In a small bowl combine the ingredients for the tamarind mixture. Set aside.

2. In a tin foil, place slices of onion, ginger and tomato.

3. Place a piece of Salmon on top of the aromatics. Season with some salt.

4.  Soup over half the mixture tamarind sauce over the salmon. 

5. Close the foil to make a pouch and ensure it is sealed all around.

6. Bake at 350 degrees for 15-18 mins.

7. Carefully open foil packet, serve with rice or some steamed greens
