Turkey and Mash Potato "Cupcake"

Here's a cute way to serve a complete turkey dinner in a muffin tin. This is great to serve for a small group of friends or something special to make for the family. If you just have 1 its the perfect portion. Will share the recipe for the brussel sprouts cause they were pretty amazing on its own.
But you can add mixed vegetables in between or just leave it plain.


Ingredients for Turkey Meatball
2 packages of ground turkey
1 egg
1 slice bread soaked in 2 tbsp milk
2 tsp salt
1/2 tsp black pepper
1/3 cup grated carrot
1/4 cup grated celery
1/4 cup grated onion
1 garlic clove finely grated
2 tbsp finely chopped parsley

Brussel Sprout Hash Ingredients
2 onions sliced
1 cup sliced brussel sprouts
1 garlic clove minced
1/4 cup dried cranberries
Salt & pepper to taste
4 tbsp butter

2 cups Cooked mashed potatoes
1 package instant gravy

1. In a large bowl, combine all the ingredients for the Turkey Meatball.

2. In a muffin tin, add paper cups however if you can find aluminum ones I'd use those. Paper ones get soggy after.

3. Using a cookie scoop, scoop about 1 full scoop and a half into each muffin cup. Once all are filled, dip your fingers into water and pat down each turkey "cupcake".

4. Bake in the oven at 375 degrees for 18-20mins or until internal temperature is 160 degrees.

5. In a non stick pan on low heat, add 2 tbsp butter and 1 tbsp canola oil. Add the sliced onions and allow them to soften until they are caramelized. Takes about 1 hr. Season with salt and pepper. Once caramelized remove them from the pan.

6. Using the same pan add 2 tbsp butter, heat to medium heat. Add the sliced brussel sprouts. Season with salt and pepper. Add the minced garlic clove and cook until the brussel sprouts soften. Return the caramelized onions and add the cranberries. Continue to cook for another 2 mins just to combine all the ingredients. Turn off heat and set aside.

7. Top each turkey cupcake with the brussel sprout hash, about 1.5 tbsp.

8. Add your mashed potato to a large ziploc bag and cut the tip large enough for potatoes to pass through. Top each cupcake with mashed potatoes.

9. Top with instant gravy and serve
