Bulgogi Chicken & Kimchi Rice- One Pot Meal
Been really enjoying these one pot meals. You can pretty much make anything. I love this classic korean pairing of sweet bulgogi and spicy kimchi rice. Dinner will be served in about 30-40mins.
Ingredients for Bulgogi marinade
6 chicken drumsticks
3 tbsp soy sauce
3 grated garlic
3 tbsp grated onion
3 green onion whites finely chopped
1/4 cup grated asian pear
1 tbsp sugar
1/2 tsp sesame oil
1 tbsp mirin
1/2 tsp pepper
pinch of salt
Ingredients for kimchi rice
1 cup rice
2 cups water
1/4 kimchi chopped
1 tbsp gochujang
2 tsp korean chili flakes
2 garlic finely minced
1/4 cup finely chopped onion
Green onion and sesame seeds for garnish
1. In a large bowl, add the chicken drumsticks and the all the ingredients for the marinade. Mix well. Allow to marinade overnight or at least for 1hr.
2. In a large skillet on medium heat, add 2 tbsp of oil. Place the drumsticks and brown on both sides. If the bottom of the pan starts to burn add the marinade liquid. Cook the drumsticks in the marinade for about 10 mins. Remove the drumsticks onto a clean plate, scoop up the reduced marinade and place on top of the chicken. Set aside.
3. Rinse the skillet and dry.
4. Heat the skillet on medium heat and add 2 tbsp of oil. Add the garlic and fry about 1 min. Add the onion and fry for 2 mins.
5. Add the rice and mix well with the garlic and onions.
6. Add the kimchi, korean chili flakes and gochujang. Mix until well incorporated.
7. Add the water and stir and scrap the bottom of the pan.
8. Bring to a boil and add the chicken on top of the rice. Cook on medium high heat for 10 mins covered.
9. Lower the heat to low and continue cooking the for another 10 mins. Turn off the heat and allow to cool for at least 15 mins. This will ensure nothing sticks to the bottom of the pan.
10. Uncover and garnish with green onions and sesame seeds.
