Stir Fry Bistek Tagalog
This dish is super fast to put together and has minimal amount of ingredients. 4 ingredients to be exact; beef, soy sauce, lemon and onions. For a special twist I love adding potato wedges to this dish. I remember making this for dad when I was younger, I think I saw someone add french fries, but potato wedges are a perfect additional, make sure to add some with the sauce and leave some freshy fried wedges to garnish around. You'll want to use a good cut of beef either sirloin or flank will work well. Your cooking this at such high heat you don't want to have over cooked dry beef.
I don't know what it is about this dish but the onions are so gooood, keeping them slightly under cooked keeps them nice and crunchy. I could add a whole onion but there would end up being more onions then beef haha
Ingredients
5-7 oz sirloin
1/2 onion cut into rings
3 stalks green onions
2 garlic minced
3 tbsp soy sauce
Half lemon juice- about 2-3 tbsp
pinch of sugar
1/4 tsp black pepper
2 tsp cornstarch
1/2 tsp dark soy sauce (optional)
1 1/4 cup Potato wedges- I am using store bought McCain wedges
1. Slice onion into thin rings, keeping the onions in the shape of a ring makes this dish look pretty but you can cut them any way you like. Slice the green onion into 2 inch long. Finely mince the garlic.
2. Slice the beef into thin pieces and place into a bowl.
3. Add the soy sauce, lemon juice, sugar, black pepper and cornstarch. Mix to combine and allow to marinate for about 30 mins.
4. Fry the McCain wedges until they are crispy.
5. In a wok on medium high heat add 2 tbsp of oil. Add the minced garlic and fry until the edges turn slightly brown.
6. Add the marinated beef, try not to add too much marinade we want to keep this dry as much as possible. Allow the beef to brown on one side before flipping it over about 3 mins.
7. Toss the beef allowing it cook on the other side. Optional to add 1/2 tsp dark soy sauce, this just adds extra dark colour to the beef.
8. Add the onions and toss quickly. Then add the green onions.
9. Add half the potato wedges and toss. Season to taste with a bit of salt and pepper.
10. Turn off the heat and transfer the stir fry to a plate. Garnish with crispy potato wedges.
11. This dish is usually served with some warm rice.
