Quick & Easy Chicken Caldereta w/ Coconut milk
This is my mom's version of caldereta, its not like most caldereta's because she doesn't make it with tomato sauce and she uses coconut cream/milk. I made a quick and easy version by using chicken breast, this dish comes together in about 45 mins, that's including prep time as well. I hope you gives this a try.
Ingredients
1 chicken breast sliced
1 potato diced
1 small red pepper
2 hot dogs sliced
1/2 small onion diced
2 garlic minced
1 cup coconut cream or milk
1 tsp annato powder
Annato oil= 1 tsp annato powder + 1 tbsp oil
cilantro for garnish
Salt & pepper to taste
1. In a pot, boil water and parboil the potatoes for about 5 mins. Drain and set aside.
2. In a pan on medium heat, add 2 tbsp oil. Add the minced garlic and saute for 1 min.
3. Add the onion, saute 1 min till garlic is slightly brown around the edges.
4. Add the red pepper and saute another 1 min.
5. Create space in the middle of the pan and add 1 tbsp oil. Add the sliced chicken breast. Season with salt and pepper.
6. Saute till chicken is half cooked. Then add the 1 tsp annato powder, saute till annato is well combined.
7. Add the hot dogs, keep saute for 2 mins.
8. Add the parboiled potatoes and saute to combine.
9. Then add the coconut cream. You can use coconut milk but the sauce will be much thin. Stir to combine.
10. Allow the sauce to boil for about 2-3 mins. Season with salt and pepper or fish sauce. Season to taste.
11. Optional is to drizzle annato oil on top for a pretty presentation and garnish with cilantro.
12. Serve with some warm white rice.
