Quick & Easy Yellow Coconut Curry Chicken- 15 min meal
This meal comes together in 15 mins. Its super fast and has a punch of flavour and heat. You can add different vegetables to make it your own. I've made this with cauliflower and potatoes for a vegetarian option.
Ingredients
1 chicken breast sliced thinly
3/4 cup coconut milk
1/2 onion diced
2 minced garlic
1 green chilli diced
1 tsp curry powder
1 tsp turmeric
1/2 tsp chilli powder
1/2 tsp salt
1/4 tsp pepper
Handful of blanched green beans
Cilantro for garnish
1. In a pot of boiling water, blanch the green beans for about 2 mins until they turn dark green. Drain and set aside.
2. In a skillet or non stick pot on medium heat, add 3 tbsp of oil.
3. Add the garlic saute 1 min.
4. Add the onions and saute another min.
5. Add the green chilli and a pinch of salt. Saute until the garlic starts to turn golden brown.
6. Once the garlic is golden add the sliced chicken. Saute 1 mins then sprinkle the curry powder, turmeric and chilli powder. Season with salt and pepper to taste. Mix well so spices are well distributed.
7. If your pan starts to brown at the bottom, deglaze with some water and scrape the bottom of the pan.
8. Add the coconut milk and stir well to combine. Allow the sauce to bring to a boil for 2-3 mins so chicken can cook through.
9. Turn off the heat and add the green beans. Stir to combine.
10. Garnish with cilantro and eat with some rice.
