Embutido Sausage Roll| Filipino meatloaf in Puff Pastry

I was watching an interview with Tom Holland (star of Spider Man) and he was talking about how much he missed having sausage rolls from back home in UK. I've heard of sausage rolls but didn't exactly know what they looked like or how they were made. So I did some research online and found a couple recipes. Soon after I thought what can I make to give this a filipino spin; I then thought of Embutido.

Embutido is filipino meatloaf that is steamed. It has lots of ingredients and there are many variations. But the original recipe is made with ground pork, diced hot dogs, sweet relish, grated carrots, raisins and a boiled egg in the middle. Some recipes add bell peppers and cheese; and more modern ones now make a "crispy" version.

In my version I will simplify the recipe just a bit but it will still have the traditional filipino flavours.


Ingredients
500g ground pork
1/4 cup diced gherkins
1/4 cup diced hot dogs (2 hotdogs)
1 tbsp raisins (add more if you like)
1 egg
1/4 cup bread crumbs
1 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
1/2 tsp onion powder

Hard boiled Quail Eggs
1 package of puff pastry thawed

1 beaten egg for egg wash

Preheat the oven to 375 degrees

1. In a large mixing bowl combine the ground pork, gherkins, hot dogs, raisins, salt, black pepper, garlic powder, egg and bread crumbs. Mix till well combined.

2. In a plastic wrapper set flat on the work surface, please the embutido mixture. Then fold the plastic over the mixture try to create a cylinder shape that is about 2inches thick. Place this mixture in the fridge while you set up the puff pastry about 15 mins. I made 2 embutido mixtures that were 1.5 inch thick and the length of my puff pastry.

3. Roll out the puff pastry onto a lightly floured surface. Close any open seems in the puff pastry. 

4. Remove the embutido from the fridge. Remove the plastic and place the unwrapped embutido onto the puff pastry. Cover the embutido cylinder with the puff pastry almost like a blanket for the embutido.

5. Now you can begin cutting the wrapped embutido into 2 inches long. Once they are all cut, place 1 hard boiled quail egg into the center of embutido mixture. If you don't want eggs in your dish, you can skip this part. Ensure the egg is covered. I made 12 rolls.

6. Place the puff pastry embutido in the fridge for about 10 mins or the freezer for 5 mins before baking.

7. Egg wash the tops of the puff pastry embutido before placing in the oven.
 
8. Bake for 30-45mins until puff pastry is golden brown.
