Ground Pork Bicol Express


























Here's my version of Bicol Express, instead of using pork belly or pork shoulder I decided to use ground pork to cut down on the fat and make this a bit more healthy. You can also use ground turkey to make this even more lean. I used serano chilies but you can definetly use jalapeno or thai birds eye chili, whatever is available to you.


Ingredients
1 pkg ground pork (750grams)
3 serano chilis
1 cup coconut cream
2 garlic cloves minced
half onion minced
1 green onion (whites and greens separated)
2 tsp shrimp paste
1/2 tsp sugar
salt and pepper to taste

1. Cut the serano chilis into circular disks. Mince the garlic and the onions, set aside.

2. In a skillet add 2 tbsp oil and heat to medium heat. Add the ground pork and cook until it is no longer pink about 5-7 mins. Season with salt and pepper.

3. Add the garlic and onions and stir fry until garlic is fragrant about 3-4 mins.

4. Add the shrimp paste and continue cooking till well combined, about 2 mins.

5. Add the serano chilis and keep mixting.

6. Add the sugar and coconut cream and mix well.

7. Taste the bicol express and season with salt and pepper to taste.

8. Turn off the heat and add the whites of the green onions.

9. Serve on a nice platter and garnish with the green parts of the green onion.

10. Eat with some white rice or enjoy it as a lettuce wrap.
