Mango Peach Jam

1.5 cups Diced mango

1 cup dice peach

1/2 cup sugar

1/2 tsp calamansi



1. Place everything into a medium sauce pan, heat over medium low heat for about an 1hr. Stirring occasionally at first. After 30-45 mins keep an eye on the pot so that the bottom doesn't burn. 

2. Continue to stir until the jam is thick and glossy. 

Tips:

- I am using atulfo mangoes that are ripe. You can use other types of mangoes but I find the best mango flavour is from atulfo mangoes.

- The peach I am using was very very ripe almost over ripe, this also give natural sweetness.

- I wouldn't substitute calamansi, but if its an ingredient that is difficult to find then use lemon instead.
