Steak & Mushroom Pancit

I noticed I haven't shared a noodle recipe for quite some time, 2 years to be exact. The last noodle recipe I shared was Kimchi Pancit, which did quite well since it was featured on the Seafood City Website Kimchi Pancit. How do I top that noodle recipe? 

I love the Beef Stroganoff recipe and wanted to put a filipino spin on this European recipe. So I thought why not make beef and mushroom pancit. There are quite a few beef and mushroom noodle recipes out there. But none of them puts a big juicy steak on top of stir fried noodles =) 

This recipe also combines western classics like steak and mushroom but enjoyed with filipino pancit. 

Also don't cheap out on the cut of steak, the better quality steak the more enjoyable this meal will be.



Ingredients

Top Sirloin Beef or striploin steak prime
Vermicelli Noodles
1/4 onion sliced
3 garlic cloves minced
2 cups sliced cremini mushrooms
1 carrot julienne 
1 stalk green onions (whites and greens separated)
3 tbsp oyster sauce
1 tbsp soy sauce
1 tsp sugar
salt
2 tbsp butter
pepper
garlic powder


1. Season steak with salt, pepper & garlic powder on both sides. In a cast iron pan set on medium high heat, add 1 tbsp of oil. Make sure pan is hot enough to create a nice sear on the steak. Cook to your liking. Mine is cooked to medium. Remove from pan and set aside.

2. In a large pot add water and bring to a boil, cook the vermicelli noodles according to package instructions do not allow to overcook. Strain and rinse with cold water and set aside 
** My vermicelli noodles come with 4 dried noodles. I used only 1 and it was enough for 2 people. 

3. In a wok set on high heat add 2 tbsp butter with a 1 tbsp oil. Once the butter melts add the mushrooms and saute until the moisture is released. 

4. Create space in the centre of work and add 1 tbsp of oil, add the minced garlic and stir fry all together for about 1 min till fragrant.

5. Add the sliced onions and whites of green onion, stir fry 1 min.

6. Add the julienne carrots stir fry 1 min.

7. Add the sauce, 3 tbsp oyster sauce, 1 tbsp soy sauce and 1 tsp sugar. If the steak has let out any liquid while resting add that to the vegetables. Stir fry till sauce is combined 20 secs.

8. Add the vermicelli noodles and keep mixing till sauce is well incorporated. 

9. Fry noodles in the wok for another 5 mins until it is dry. This gives a nice texture to the noodles.

10. Add the noodles to a plate.

11. Cut the steak and place on top of the pancit.
