Bacon Scallop Noodles

 There are no words to describe how amazing these noodles are. If you are a seafood lover, then you know how incredible and delicious bacon wrapped scallops are. This was the inspiration for my noodle dish. Smokey and crispy bacon with tender sweet scallops, all tossed with eggy noodles; it will blow you mind! 

And to take this dish to the next level why not top the noodles with enormously large scallops wrapped in bacon. This a noodle dish for a special occasion. 


Ingredients
3/4 cup of small baby scallops 
3-4 slices of bacon diced
2 minced garlic 
1/2 onion sliced
1/2 cup thinly sliced carrots
1/2 cup green beans sliced the same size as the carrots
1 tbsp soy sauce
3 tbsp oyster sauce
1/2 tsp sesame oil
1 tsp sugar
1 package yakisoba or egg noodles

2-3 large scallops (depends how many you want to serve)
2-3 slices of bacon

1. Dry the large scallops and wrap the bacon around leave about 1 inch overlap. Secure with toothpick, set aside in the fridge. 

2. In a cold wok, add the diced bacon. Bring the heat to medium and cook the bacon until it is crisp. Remove the bacon. 

3. In the same wok, remove excess bacon fat but leave about 2 tbsp.

4. Keeping the heat on medium add the minced garlic and fry until fragrant about 2 mins. 

5. Add the sliced onion saute another 2 mins.

6. Add the green beans stir fry another min and add 2 tbsps water to steam the green beans. ** I like my green beans tender if you like more crunch skip the water. 

7. Once the water is absorbed then add the carrots. Stir fry another 1 min.

8. Create space in the centre of the wok and add the small scallops. Stir 1 min.

9. Add the soy sauce, oyster sauce, sesame oil and 1 tsp sugar. Mix to combine then immediately add the egg noodles. ** make sure to rinse and separate the noodles cause they tend to stick together

10. Toss everything together until well combined. Stir fry for about 7-8 mins. 

11. Add the crispy bacon and toss again. Set noodles aside.

12. In a non stick pan add a 1 tbsp oil and heat to medium. Add the large bacon wrapped scallops
