Salted Egg Seafood Stir Fry- Perfect for Lunar New Year
Ingredients
7-8 large prawns
7-8 Half shell mussels
1 cup bay scallops
3 garlic cloves minced
3 green onions (separate greens and whites)
1 thai chili
3 salted egg yolks diced
1/4 tsp sugar
salt & pepper
1. In a wok or deep fry pan, add 2 tbsp oil on medium high heat.
2. Add the garlic and fry until edges start to turn brown about 2-3 mins
3. Add the green onion stems and thai chili, stir fry 2 mins.
4. Add the salted egg yolks and mash well into the oil, it will bubble and become thick.
** if your salted egg isn't as "salty" you may need to add 1 more
5. Add the large prawn and mussels and stir fry 2 mins. Turn the mussels over so they are shell side down. Season with a bit of salt and pepper and 1/4 tsp sugar.
** make sure to clean the mussels well, I like to soak them and scrub salt. Some mussels have barnacles and other things on the shell, I will take a knife and scrap the shells. This will ensure no fishy flavours in your cooking
6. Add 2 tbsp of water and cover the pot, steam for 5 mins.
7. Remove the lid and add the bay scallops, stir fry 2 mins as the scallops don't take too long to cook.
8. Turn off the heat and garnish with green onions.
